Red Hawk is for the bold! This cheese conveys the character of coastal Northern California. This organic triple cream cheese is Mt Tam’s funky cousin! Red Hawk showcases the best of Point Reyes Station, Cowgirl’s Creamery’s birthplace and the only place where this unique cheese can be made. Beyond its rough and rowdy aroma, this cheese has notes of cured meats, wild sage, and a kiss of ocean air. Made from the organic milk of Bivalve Dairy which lies 2 miles from our creamery. This milk provides the beginnings for this cheese when washed with brine and aged, reflects natural flora and flavors of West Marin.
