Gruyere 1655 comes from one of the highest rated and award-winning dairies in Switzerland, a country where making cheese is about following strict and traditional guidelines. Production is a joint effort between Jean-Marie Dunand at Fromagerie Le Cret and Gérald Roux at Fromage Gruyere SA in the region of Fribourg in Western Switzerland. Dunand only uses the milk of cows that graze in lush, high-altitude pasture, citing its exceptional quality. He makes about half as much cheese as his quota would allow in order to have each wheel come out perfectly. Fromage Gruyere SA leads the way for quality control with gruyere, conducting monthly inspections of production facilities and choosing to age cheeses that pass their strict standards. Fromagerie Le Cret and Dunand’s gruyere is usually at the top of the list when it comes to quality standards, and has received the Gruyere Associations Medaille d’Or multiple times. Aged for a minimum of 12 months, Gruyere 1655 is the most perfect example of gruyere you can find in the world. It has a bright fruity flavor with a deep, structured nuttiness with flavors of brown butter and cream. These 75-lb wheels have a rich, firm paste dotted with small salty pinpoints throughout.
