Teleeka is a blend of cow, sheep and goat’s milk and is inspired by the Italian robiola, La Tur. In the Miwok language, it means “three.” With a wrinkly, damp rind, this little cube gives way to a gentle popcorn colored interior. Creamy and palate-coating, this cheese is a perfect balance between gamey, tangy flavors of goat & sheep’s milk and the big buttery flavors of cow’s milk. With a thin layer of cream under the rind, this cheese is buttery, tangy, grassy and at times can taste a little barnyard-y. Pair with a shaving of black truffle and some sparkling wine.
