Charles Wekselbaum has been making outstanding dry cured salami's since 2011 when he founded Charlito's Cocina. Influenced by his Cuban, Jewish and American heritage and inspired by the magic of curing, Charles transforms simple high quality raw ingredients into delicious, beautiful and uniquely flavored salamis. Charlito's starts with sustainably raised, antibiotic free, vegetarian fed, heritage breed pork, and hand harvested, solar evaporated sea salt. Charlitos Salami's are made in small batches by hand and slowly aged. Charlitos Cocina is located in Queens, NY.
