The Fatted Calf is a small, family operated charcuterie located in Napa, CA. The pork used is pasture raised on small family farms and are members of The Heritage USA cooperative. The Fatted Calf uses only these heritage breed pigs and high quality seasonings to produce delicately and creatively seasoned salami using traditional methods.
