Fra’ Mani Rosemary Ham comprises three major muscles of the pork leg - inside round, outside round and eye of round. The legs are graded then trimmed carefully, leaving a thin layer of flavorful cover fat on the outside portion. The hams are lightly brined, formed by hand into a teardrop shape, trussed, and lightly smoked over natural hardwood. Fra'Mani hams are simply HAM with no added water in the finished product. A long slow roasting cycle is used to ensure a moist and supple texture in the finished ham. The delicate flavor of the rosemary compliments the exquisit flavors of the meat.
