Bellwether Farms
Ed & Cindy Callahan originally bought Bellwether Farms as a weekend getaway. Sheep were brought in as natural weed control and for the first four years, cheese wasn’t even on the radar. Luckily, Ed & Cindy’s son, Liam took over as head cheesemaker and his wife, Diana took over operations. The rest is history. Trained in old-world Italian cheesemaking, Liam uses the milk of his pasture-raised East Friesian sheep and the milk of Jersey cows from the neighboring dairy for his cheeses. The Callahans are true stewards of the land who live and breathe their award-winning cheeses. Tomales Bay Foods have represented their produts in the bay area since 1997.
