Capriole, helmed by legendary cheesemaker Judy Schad, was at the forefront of America’s artisan cheese producers. With the focus on holistic animal and land management, the milk of almost 2,000 very happy goats is still hand-ladled to make cheese. Partnering with several farms in the surrounding Indiana countryside, Capriole still retains a family feel and sets the standard for cheese across the country.
