Joe and Mary Matos grew up on the lush volcanic island of Sao Jorge in the Portuguese Azores. Moving to Santa Rosa in 1979, Joe and Mary immediately set forth to make a family recipe that they could share with the large Portuguese population in the region. Named for their home island, St. Jorge is made using milk from their small herd of 35 Jersey and Holstein cows. Following biodynamic farming principles, the 7th generation of the Matos family has gotten involved with producing cheese!
