Our limited seasonal release transports you to the scents and sights of a lush late winter/early spring in West Marin. Named in honor of St Partick's Day, this bloomy rinded beauty starts with single source organic cow's milk from nearby Bivalve Dairy. Each 8oz wheel is strikingly wrapped with local organic dark green nettles from Paradise Valley Farms in Bolinas. These nettles are prized by chefs and foragers for the verdant, bitter bite. The nettles compliment the rich dense paste of the cheese resulting in flavors of artichoke and grassy vegetable notes on a wave of brown butter.
