
O’Banon is modeled after the traditional French goat’s milk cheese from Hautes Provences, Banon. Judy Schad decided that her version needed an American twist. Fresh pucks of chèvre are wrapped in chestnut leaves that have been soaked in Woodford Bourbon, from the nearby state of Kentucky. Not only is the presentation of this cheese rustic and beautiful, it is a flavor powerhouse. Crumbly in texture, but creamy on the palate, this cheese is bright, tart and herbaceous. The bourbon-soaked wrapping helps the cheese retain moisture, and gives notes of vanilla with a mild tannic note. This cheese takes center-stage of any cheese board.
