
Each Piper’s Pyramide has a thin layer of paprika running through the middle of it. As it ages, it is lightly dusted with paprika, giving the cheese a bright, mottled burnt-orange hue. Why all the red? To honor Judy Schad’s red-head granddaughter, Piper, of course! The curds are hand-ladled into molds, which gives the cheese a fluffy, velvety texture when young and becomes dense and buttery with age. The flavors in this cheese are a play on savory & sweet - savory and earthy from the paprika, then bright, tangy and sweet from the milk.
