Made with raw milk, Cloud Cap is reminiscent of the famous Welsh cheese, Caerphilly. With a crumbly texture, a mottled grey rind surrounds a lemony-yellow paste that gives way to an ivory center. Notes of citrus, wild garlic and grass come through with a milky and vegetal aroma. Try this cheese with sour cherry preserves and a glass of Chardonnay.
