Named for the nearby Sawtooth Huckleberry Fields on the shoulder of Mt. Adams, Sawtooth is Cascadia Creamery’s first washed-rind cheese. Not super stinky, this brine-washed round has a comforting yeasty aroma, almost like pizza-dough or baking bread. With a fudgy texture, the cheese is meaty, nutty and creamy with a slightly sweet finish. An ideal companion to a sour beer!
