Alpha Tolman is inspired by Alpine-style cheeses (or, the traditional cheeses made from the milk of cows grazing in highland pastures throughout the French, Swiss, German and Italian Alps). Named for the grandson of the founder of Greensboro, a philanthropic dairy farmer who also happened to found the Greensboro library, and is an homage to their local community. Produced in partnership at the Vermont Food Venture Center in Hardwick, VT, curds are cooked and pressed during production, and then wheels are washed in a culture-laden brine and aged for 8 - 11 months at Jasper Hill. This cheese is funky and robust, which flavors of caramelized onions, butter and roasted meats. The texture is tight and slightly elastic, dotted throughout with salty crystalline structures. Perfect for snack time. Even more perfect for some winter time fondue!
