
One of the first cheeses produced by Jasper Hill Farm, this blue is based off of English natural-rind blue cheeses. Despite the British inspiration, the name is all-American, named for the Bayley Hazen Military Road, a Revolutionary War supply route commissioned by George Washington that runs through Vermont. Fudgy, dense and creamy this cheese is both spicy and sweet. Despite substantial peppery blueing throughout, it’s made with milk from Ayrshire cows, which is lower in fat content and gives this cheese a grassy and nutty quality. A delicious companion to crisp pears or sprinkled in a chicory salad.
