This Clothbound Cheddar is a collaboration between the Cabot Cooperative Creamery and the Cellars at Jasper Hill. A single-origin cheese, milk for each wheel is sourced from Kempton Farm then sent to the Cellars for aging. Wrapped in a combination of lard and bandages, each wheel is brushed, flipped and monitored for a minimum of 10 months before being released for sale. Modeled after the great English cheddars, Cabot Clothbound is bright, savory and nutty with hints of salted caramel and fruit. Firm, with a slight salt-crystal crunch, this cheese is both complex and approachable!
