One of the newer additions to the Jasper Hill Farm roster, Eligo is the result of a partnership with a nearby goat dairy, Bridgman Hill Farm, owned by husband & wife team, Ryan Andrus and Annie Rowden. Named after a nearby lake, Eligo offers the best of both worlds: buttery richness from the cow’s milk with soft, white pepper spice from the goat's milk. Washed in a brine while very young, the orange-tinted rind gives the cheese a distinct earthiness. Pair with a natural orange wine or a sour beer.
