
This cheese, named for a Greensboro Revolutionary War hero, is inspired by classic French brie. At peak ripeness it tastes like tangy crème fraîche, cauliflower, mushrooms and toasted nuts. The bloomy rind surrounds a pudding-like interior which is soft without being gooey. A small, yet always welcome addition, to a cheese board.
