Produced by Sebastian von Trapp on his family’s farm in Vermont’s Mad River Valley, Oma is a fudgy, washed-rind, tomme-style cheese. Regularly washed in a brine as it ages, Oma is equal parts savory and sweet, with notes of toasted nuts, cured meat and fresh butter. Mildly pungent, with a peanut-butter like texture, Oma is definitely an indulgent treat.
