
Patience is rewarded as proven by the arrival of Winnemere, made only in the Winter when the milk at the peak of richness. The cows, tucked into the warmth of the barn and in the company of their herd, their meals are served. No need to forrage between November and March when it is cold outside! Grain and hay, produced in the surrounding fields and suplimented with grain, they give thanks by producing luxurious milk. This cheese is inspired by the great bark wrapped cheeses of France,Winnemere is wrapped in local Spruce bark, harvested by a Greensboro local and washed with a salt brine during aging. The local molds, yeasts and microbes create flavors unique to this place and through this milk. A true sense of place. Patience rewarded
