
Barnburner, a collaboration with Grafton Village Cheese in Vermont, is a beautiful raw cow’s milk cheddar. The milk for this cheese is sourced from herds of Jersey cows managed by Amish farmers in New York. The milk is dyed with annatto, which gives the cheese a stunning burnt orange hue, and the blocks are cold smoked for two hours. Once at Crown Finish, the blocks are wrapped in lard and cloth, and then aged for 4 months. Dense and fudgy, this medium-sharp cheddar is both meaty and grassy and visually stunning!
