
After a trip to Europe, Mary Keehn had a dream that inspired her to make a cheese that was a nod to the French classic, Morbier. This cheese vision needed to include a nod to the foggy weather of Humboldt, and so May Keehn produced a French classic in an American way. Crumbly yet creamy, Humboldt Fog is tangy, tart and clean, always with the signature blue-grey line of vegetable ash running through it. As Humboldt Fog ages, its subtle tanginess grows more pronounced and a runny edge of thick and delicious cream begins to develop under the rind and drift to the center of the cheese. Looking like a birthday cake of goat cheese, Humboldt Fog is instantly recognizable. Time to celebrate...with cheese!
