Chipotle peppers are scattered throughout, and the signature line of vegetable ash is replaced with a thin layer of chocolate from Eureka-based chocolatier, Dick Taylor. This cheese is a wild ride - smoky, earthy, floral, herbaceous all mixed with flavors of buttermilk and bright citrus. As wheels age, the creamline under the rind becomes more runny and the flavor intensifies. Pair with a Corona light.
