L’Amuse Gouda is a wonderful collaborative effort. Milk is sourced from Holstein-Fresian cows that graze in below sea level pasture in the Beemster region Northern Holland. From there, two gouda producers use the milk to make wheels of young gouda. Then Betty and Martin Koster select wheels to age in their Amsterdam-based Fromagerie L’Amuse shop. Their Signature Gouda is aged for over 24-months, in a uniquely warm and humid environment. This aging treatment allows the cheese to develop a wonderful crumbly yet dense pate with pronounced freckles of salty crystal formations throughout. The flavor is robust and full - with notes of butterscotch, salted caramel and toasted hazelnuts. It is also a beautiful Dutch sunset orange color!
