The Greek island of Lesbos is one of the only places in the world with a PDO (Protected Designation of Origin) for feta. With a millenia-old tradition of shepherds grazing their native flocks in the seaside hills near the western village of Agra, milk is delivered to the factory twice a day. Headed by cheesemaker Panagiotis Tastanis, this dairy creates a soft, pillowy, 100% sheep’s milk feta that is much softer than most Americans are used to. Tangy, salty, lemony and at times a little sweet, you have never had a feta like this.
