Based on classic English cheddars, each 60 pound wheel of Fiscalini Bandage-Wrapped Cheddar is wrapped in cheesecloth and coated with lard when young. Over the next 14 - 18 months, the bandages help the cheese retain moisture while developing depth of flavor, resulting in a flavorful American cheddar. When ready to be eaten, wheels are firm and crumbly and have a savory quality about them. This cheese is earthy, grassy and nutty with notes of butter and fresh fruit.
