
One of the first cheeses made after John Fiscalini returned from Switzerland, San Joaquin Gold was made with fontina in the back of his mind. It didn’t turn out exactly like fontina, but something truly unique - and John decided to name it after the valley where it was created. A versatile cheese, San Joaquin Gold is somewhere in between a cheddar, parmesan and gouda. With a golden paste that is reminiscent of the hills of the San Joaquin Valley, this cheese is earthy and nutty with a distinct caramel finish. Salt crystal buildup is prominent throughout, which adds a pleasant saltiness to each bite. Mellow but powerful!
