
Caña de Oveja, is loosely modeled after the traditional French cheese bucheron. It is produced by Central Quesera Montesinos, who also produces Caña de Cabra, a more widely available goat’s milk version. Made in limited quantities, it is Elegant and unique, with a white mold rind and a fluffy, creamy interior. The sheep’s milk gives this cheese a bright, tangy, and wooly flavor and a texture that will coat your palate. Pair with rosemary crackers and a bottle of sparkling mineral water.
