Casatica di Bufala is produced by Quattro Portoni, a family-run farm in Bergamo, Italy that has raised water buffalo since the mid-1950’s. Italian water buffalo, while they produce milk in low quantities, actually produce milk with the highest fat content of all dairy animals. As a result, cheeses produced by water buffalo milk are extremely rich, flavorful and decadent. Casatica di Buala is no exception. Quattro Portoni says that the small brick shape is key to promoting healthy bloom on the rind and maintaining the correct moisture quality, creating a spreadable and creamy paste.
