
Garrotxa hails from Catalonia, where it almost went extinct. With little interest in Spanish cheeses, production this cheese dwindled until the early 1980’s, when a 20-something named Josep Martí helped spearhead a movement to revitalize the traditional farmstead products of the area, including Garrotxa! Production of this cheese is small - with only a dozen people working at Martí’s family dairy, Sant Gil D’Albió. With a natural, grey rind, these small rounds look more like smooth rocks than cheese. But, cut it open and it will reveal a bone-white interior of semi-hard goat’s milk cheese. Garrotxa has a delicate, minerally quality and flavors of tangy milk, grass and herbs. Enjoy with marcona almonds.
