
Fulvi Pecorino Romano is one of the last DOP producers that exist on the outskirts of Rome. Situated in Nepi, a town 15 miles north of Rome, this is a 100% sheep’s milk cheese, collected from dairies in the surrounding region of Lazio. Produced with whole milk (rather than skim milk, a practice common in Sardinia and other places) the cheese is rich and robust. Coated in black wax and aged for 10 - 12 months, a true Pecorino Romano is not meant to be overly-salty, but rather pungent, nutty and fruity. This cheese will make the best cacio e pepe you’ve ever had!
