
Quadrello di Bufala is produced by Quattro Portoni, a family-run farm in Bergamo, Italy that has raised water buffalo since the mid-1950’s. Italian water buffalo, while they produce milk in low quantities, actually produce milk with the highest fat content of all dairy animals. As a result, cheeses produced by water buffalo milk are extremely rich, flavorful and decadent. Quadrello di Buala is no exception. Made in a similar style to taleggio, the curds for Quadrello di Bufala are washed and steamed before being placed in molds, giving it a distinct doughy texture. The bricks are then bathed in a brine every 4 - 5 days while aging, resulting in a pungent, tacky rind. This creamy cheese tastes like sweet cream and fresh hay, and it is a nice balance to the pungent rind, which smells of mushrooms and fresh tilled soil. Nibble on a wedge while sipping Lambrusco.
