Named for the scenic bluff overlooking the village of Grafton. Grafton receives sheep milk from Central New York Dairy Sheep Producers Cooperative.ust about 2 hours west of Grafton Vilage. The producers do all of their farming with horsepower and horse drawn machinery. Approximately 90% of the group's sheep are pastured on a clover grass mix during the summer months (May-Oct, depending on weather). Dry hay & some grain is fed during winter months. The resulting cheese is earthy and brothy in aroma and has flavor notes of dark sweetness with a salty minerality expected from the sheeps' milk.
