This soft-ripened wheel begins with fresh, local goat milk that is turned into curd, gently cut and poured into molds, where it is allowed to drain naturally and retain as much moisture as possible. This Goat Brie is aged for a quick 2-weeks before it is delivered to customers, resulting in a soft, gooey cheese with a velvet-y texture. Flavor notes included tangy cream, grass, raw peanuts, and zippy lemon. Pair with a grapefruit forward Sauvignon Blanc.
