Quinta translates to Farm in Portuguese. A nod to the Giacomini sisters maternal Grandmother who came from Portugal. The milk for this bloomy rinded beauty comes from the milk of the Point Reyes Farmstead herd in Point Reyes Station, Ca. The flavor of the cheese is attributed to the exceptional farming practices matched with the cheesemaking expertise of Kuba Kemmeringling head checesemaker. Each wheel is wrapped in Spruce bark, guaranteeing the rich pudgy paste stays put within its bloomy rind until ripening is complete. Delicious when consumed young at 30 days or when at its peak at 80 days. The Calfornia Bay leaf placed on the top of the cheese lends a hint of herbaciousness to the rich paste. Beautiful to the eye and delicious to the palate.
