The flavor of the cheese is attributed to the exceptional farming practices matched with the cheesemaking expertise of Kuba Kemmeringling head checesemaker. Each wheel is wrapped in Spruce bark, guaranteeing the rich pudgy paste stays put within its bloomy rind until ripening is complete. Delicious when consumed young at 30 days or when at its peak at 80 days. The Calfornia Bay leaf placed on the top of the cheese lends a hint of herbaciousness to the rich paste.
