Toma is made in a similar style to a classic Gouda. Washed, pressed, then lightly brined, this cheese is incredibly amiable and versatile. When young, the paste is creamy and buttery and tastes of tangy cream and fresh grass. When older, the cheese resembles an Italian Asiago, with sharper, nuttier flavors.
