Manchego is probably the most easily recognized Spanish cheese ever produced. This Pasamontes Manchego is an authentic example of the pre-industrial Manchego. Made by 4th generation cheese producer, Maria Dolores Palomares Pasamontes. This cheese has been produced on this land from these native bred sheep since founded in 1896, Pasamontes now works with her neighbors - local sheep herders who purchased the familys herd. The traditional herding practices, forage based feed haven’t changed much from 100-years ago. The result is a rich, intensley flavorful herbaceous, nutty wheel with an all-natural rind boasting a zig-zag pattern from traditional esparto grass baskets used to form the cheese. Firm, with tiny eyes throughout, you won’t be able to stop snacking on this cheese that smells of roasted almonds and cream.Complex in flavor with out the intense zip of most Manchegos. Pair with a platter of figs and a small tin of sardines.
