
In the late 1940s, Luis Figueroa y Pérez de Guzmán el Bueno, Count of Quintanilla, met a young American woman, Aline Griffith, a CIA agent. Aline fell in love with the Count but also with the rich history and incredible beauty of his family’s estate, Finca Pascualete. After their marriage, Aline dedicated herself to preserving the culture and traditions of the area and began to produce artisan farmstead goods, including sheep’s milk cheese. Using milk from the farm’s herd of Merino sheep (who receive hand-made granola as part of their diet!), it can take a day’s worth of milk from about 8 - 10 sheep to make one small wheel of Pascualino! Aged for 3-months, this oval-shaped cheese is earthy and sweet, with notes of vanilla, caramel and honeysuckle. Try it out with a little membrillo and a walk through your estate.
