
In 1914, Arrigoni Battista began making traditional cheeses following old family recipes from Lombardy. Taleggio has origins back to the Romans and there are many producers throughout the regions. But, in the 1950’s Arrigoni Battista quickly proved to be an industry favorite, providing young wheels to more well-known brand names throughout Italy. After 30 years of steady, sustainable expansion, Arrigoni Battista decided to sell cheeses under their own label, including their own wildly popular taleggio. Taleggio Castel Regio is a glorious soft creamy cheese, hand-salted and aged for a minimum of 35 days in pine boxes, which give it its characteristic square shape. Stamped on the pinkish rind is a representation of the Pagazzano Castle, one of Lombardy’s most famous landmarks, a symbol of the dedication to the artisan techniques and recipes of the region. Soft and slightly tacky in texture, this cheese is creamy, yeasty and slightly sweet. Try using in a risotto, tossing in pasta or slathering on a rustic loaf.
