
A certified organic cheese, with milk coming from Rogue Creamery’s own herd of Brown Swiss and Holstein cows, Caveman Blue is named after a regional mascot - “The Caveman.” Aged for a minimum of 12 months in limestone caves, this cheese is a fruity, dense blue with hints of vanilla and a texture full of butter and crystals. Other flavor notes include shiitake mushrooms, beets and vanilla. The earthy quality of this blue lends itself beautifully to bold reds, such as Zinfandels or Cabernets.
