
Coppinger is a nod to the classic Morbier, with a line of blue vegetable ash running through the middle of it. This technique was historically used as a method to protect the morning milking’s curd from pests before the wheels were complete with the evening milking’s curd. Lightly washed as it ages, the cheese takes on a beefy aroma, with delicate flavors of butter, nuts, fresh-cut grass and grilled citrus. This cheese makes a great addition to your cheeseboard - try with pickled green beans and a glass of bright Gamay.
