
Take local fig leaves then soak them in Chattanooga Whiskey. Then wrap them around a small wheel of raw milk cheese and allow it to rest for four months. Et voila - you have Shakerag Blue. While aging the wheels are pierced with blue-mold inoculated needles, allowing for blue to travel through the dense, fudgy interior. When ready, the cheese is a brilliant balance between sweet, savory, earthy and fruity. The cheesemaker describes the flavor similar to “root beer” but there are also notes of bacon, pineapple and dark chocolate throughout. Complex and creamy, this cheese is truly a representation of Tennessee terroir!
