Reading (pronounced “redding”) is made with raw milk from their local partners, Fox Valley Farm and Jericho Hill Farm. Modeled after Raclette, which is classically melted and served with roasted potatoes and gherkins, Reading is a beautiful melting cheese. The interior paste has a smooth texture with flavors of butter, nuts and fresh cut grass. The washed rind gives it a slight funkiness and a wonderful depth of flavor that is perfect for snacking or cooking!
