
Inspired by mixed milk cheeses from Spain, Cabrillo is a blend of goat and cow’s milk. The cheese is produced exclusively in Autumn - after a long summer of grazing on pasture, milk production in the Stepladder goats starts to slow down and take on a more pronounced flavor. Rich, buttery and herbaceous, this cheese is delicious alongside ripe figs and roasted almonds.
