
Atika means “two” in the Miwok language, and is a semi-firm cheese made from a blend of sheep and goat’s milk. Lightly washed as they age over a period of six to nine months, when the wheels are ready to be released they are given a final wash in Balletto Vineyards chardonnay. With a crumbly, flaky texture, this cheese is surprisingly delicate in flavor. With notes of sour cream, buttered toast, wildflowers and toasted nuts, you are instantly transported to the wild hills of Western Marin. Pair with a Pink Lady Apple.
