Twig Farm Tomme is a firm, rough-hewn sturdy drum of raw goat’s-milk cheese from Michael Lee and Emily Sunderma and the milk of a small herd of Alpine goats who reside at the farm ICE HOUSE FARM in Goshen, Vt.. Twig Tomme is technically based on the great cow’s-milk tommes of the French Savoie mountains, but like all of Lee’s cheeses, it’s wilder, free-form, and he has made it distinctly American.
