
Pleasant Ridge Reserve was the original cheese out of this creamery and is an aged, Alpine-style cheese. Made only in the summer months, when their cows are able to be on pasture full time, this cheese is truly beautiful. Lightly washed as it ages over a span of 7 to 14 months, this cheese is a perfect example of seasonal cheese making. The high-quality milk from this farm’s cows gives this cheese a wonderful depth of flavor - rich and salty, with a long, fruity finish - as well as notes of fresh grass, caramel, pineapple and nuts.
