
Dry Jack Special Select originally started as Mezzo Secco, a firm cheese that would survive warm California summers in low-tech “iceboxes,” which were common during the 1920’s - 1940’s. Originally only available from May - October when milk was best, production was at its peak and iceboxes were used the most frequently, Vella stopped production of this cheese at the end of World War II. It was revived in 1999, with several iterations, including the Special Select, which is aged for 12 - 24 months. Special Select has a dense, firm texture, similar to a Parmigiano Reggiano and is salty, nutty, herbaceous and fruity. It is coated with a distinct blend of cocoa, vegetable oil and black pepper. A wonderful table cheese that can also be used grated over fresh pasta. Pair with a California lager.
