
Bijou means “jewel” in French, and this goat’s milk cheese is a true treasure. Each small button is formed by hand and develops a wrinkly Geotrichum candidum that helps maintain the cheese’s distinct personality. This dense cheese is cake-like and creamy, becoming denser towards the center. When young, it is milky and clean in flavor, with balanced grassy notes. As it ages, the flavors become more intense, developing a pronounced tanginess and runny cream line under the rind. Pair with pancetta and an amber cider.
